Recipe for Parmesan Chicken and Rice

Parmesan Chicken and Rice is one of my favorite meals to make for new moms.  Here is the recipe – try it out!


  • Boneless skinless chicken breasts, cut into three to four pieces each or chicken tenders
  • 1/2 cup parmesan cheese
  • 1/2 cup bread crumbs
  • 1 tsp. oregano
  • 1 tsp. basil
  • Generous dash of garlic
  • 1 can of Campbell’s cream of chicken soup
  • 1 cup milk
  • 3 cups of cooked rice (1 cup uncooked rice)


Prep time – 25 minutes

Cooking time – 60 minutes

Preheat the oven to 400 degrees.

Cut your boneless skinless chicken breasts into about three pieces each.  You are looking to make each piece about one serving.  You can also use chicken tenders or other pieces of chicken as long as you are happy with the size.  Combine on a plate or flat surface the bread crumbs, parmesan cheese, and spices.

Roll each piece of chicken in the bread crumb mixture and place into a 13 X 9 baking dish.

Heat the oven to 400 degrees.  Put the chicken in the oven for 20 minutes.  After 20 minutes, flip each piece of chicken over.  Cook for another 20 minutes.

On the stove top, cook 1 cup of rice.  Add the can of cream of chicken soup and milk to the rice and stir.  I use Campbell’s soup when cooking for other moms because it tastes better than generic.  Take the chicken out of the oven and flip over one more time.  Place the rice mixture over the chicken and spread out in the pan.  Sprinkle the top with the rest of your breadcrumb mixture.

Bake again for 20 minutes.
